Breakfast is the most important meal of the day.  Whatever you have for breakfast should stick with you until lunch, especially when you’re out working on the farm.  Our go-to breakfast is soaked oatmeal.  Make it up the night before, turn the burner on low under the pan of oatmeal in the morning, head out to do morning chores and viola!  Breakfast is ready when we come back in.  We add in seasonally available fruit, nuts and raisins to mix it up a little.   We do vary a little with our breakfast options, homemade granola, eggs & bacon and on occasion, boxed cereal.  Most of the time when it comes to breakfast, oatmeal is on the menu.
One morning last winter, when it was chilly in the house and I was thinking of ways to help warm things up, I started thinking about baked oatmeal.  After looking around for some recipes and not finding what I was looking for, Travis decided to make up his own recipe.  He’s good like that.

Mornings are always a rush around here, there are animals to care for right away in the morning and then get to the projects that are on the schedule for the day.  Travis developed a recipe that we could mix up the night before and have it ready to pour into a baking dish and put into the oven in the morning.  By the time we get back in from chores and make some coffee, the oatmeal bake is done!  We’re all about simplicity around here!
The kids love oatmeal bake and request it often.  It’s interesting how changing up our usual oatmeal into a baked version turned it into a treat!  We have tried several variations, but our all time favorite is cinnamon raisin.  Cinnamon Raisin Oatmeal Bake has become our weekend breakfast standby when the temperatures drop, and it’s a great breakfast to whip up when we have guests over.   I hope you enjoy it as much as we do!

Ingredients
  1. 3 eggs, lightly beaten
  2. 1/4 cup maple syrup
  3. 1 tsp vanilla
  4. 1/2 cup unsweetened applesauce
  5. 1 1/4 cups milk (dairy free milk works great)
  6. 1 tsp salt
  7. 1 tsp baking powder
  8. 1 tsp cinnamon
  9. 3 cups old fashioned rolled oats
  10. 1 1/4 cups raisins
Instructions
  1. Mix wet ingredients together and mix well. Add dry ingredients to wet ingredients and place bowl in fridge overnight.
  2. In the morning, pour into a greased 9x9 pan. Place pan inside oven and preheat oven to 375. Bake for 60 minutes or until set in the middle.
  3. Serve warm with a pat of butter on top. Enjoy!
